Pancake Day, or Shrove Tuesday, is a fun and festive tradition that involves eating pancakes and marks the start of the season of Lent in the Christian calendar.
This year, Pancake Day falls on February 21st. To help you prepare, we're sharing a delicious and healthy buckwheat pancake recipe made with Grechka. While the traditional recipe includes flour, eggs, milk, and sugar, there are many variations and regional differences.

We understand that making pancakes can be tricky, so our recipe is super easy and quick, helping you avoid any potential failures.
Serves 4 – cooking time 20 minutes
Ingredients:
1 cup cooked Grechka buckwheat
½ cup plant-based milk, room temperature
1 egg
2 tbsp buckwheat flour (can be bought or made from Grechka in a coffee grinder)
¼ tsp baking powder
¼ tsp salt
2 dates, pitted and thinly sliced
Method:
In a large mixing bowl, whisk together the buckwheat flour, baking powder, and salt.
In a separate bowl, beat together the plant-based milk, egg, dates, and cooked Grechka.
Add the wet ingredients to the dry ingredients and stir until just combined.
Transfer the mixture into a food processor and blend well.
Heat a non-stick pan or griddle over medium heat.
Cook the buckwheat pancakes for 2-3 minutes on each side using a drop of olive oil, or until they are golden brown.
Serve hot with your favourite toppings, such as syrup, berries, or sweet treats.
