Tomato and Grechka Salad

Grechka buckwheat is a great source of fiber and protein, making it a perfect ingredient for a healthy and satisfying meal. The addition of radishes, spinach, and tomatoes provides a wealth of vitamins and minerals, including vitamin C, potassium, and iron.
Serves 4 – cooking time 15 minutes
Ingredients:
1 small onion, sliced
250g cooked Grechka buckwheat
100g radishes, thinly sliced
120g baby spinach
1 gherkin, sliced
300g tomatoes, sliced
20g fresh dill, chopped roughly
½ lemon juice
2 tbsp olive oil
1 tsp Dijon mustard
½ tsp honey
1 tsp white wine vinegar
Method:
Cook Grechka buckwheat according to the instructions
Put chilled cooked Grechka buckwheat, radishes, spinach, gherkin, tomatoes and onions in a bowl and mix well
Place lemon juice, olive oil, Dijon mustard, honey and white wine vinegar in a small jar and mix well
Pour over the dressing, add dill and toss everything together
Serve on a plate and enjoy!
