The Grechka Buckwheat salad with turkey is a healthy and nutritious recipe that offers a balanced combination of wholesome ingredients.
The buckwheat provides complex carbohydrates and fibre, while the turkey contributes lean protein. Ingredients:
1 cup Grechka buckwheat
200g turkey, cut into small pieces
Olive oil
Your favourite seasonings for turkey
2 tomatoes, chopped into cubes
1 red pepper, chopped into cubes
1 cucumber, chopped into cubes
1 avocado, chopped into cubes
Rocket leaves
Salt and pepper to taste
Juice of half a lemon
Method:
Boil the Grechka buckwheat according to the standard instructions.
While the buckwheat is cooking, fry the turkey pieces in olive oil, seasoned with your favourite seasonings, until cooked and slightly golden.
Set aside the cooked buckwheat and turkey to cool down.
Prepare the vegetables by chopping the tomatoes, red pepper, cucumber, and avocado into cubes.
In a large bowl, place a bed of rocket leaves, and add the chopped tomatoes, red pepper, cucumber, and avocado.
Add 2 tablespoons of the cooked buckwheat and 2 tablespoons of the fried turkey on top of the veggies.
Drizzle a bit of olive oil over the salad, and season with salt and pepper to taste.
Squeeze the juice of half a lemon over the salad for a refreshing tang.
Mix all the ingredients well to ensure the flavours are evenly distributed.
