How to Make Delicious Homemade Buckwheat Bread

Today, we're excited to share a special recipe for homemade buckwheat bread using our premium Grechka Buckwheat. By grinding our organic buckwheat into flour, you can enjoy a truly fresh and flavourful bread that's perfect for any occasion.

Ingredients:
400 g Grechka Buckwheat (ground into flour in a High-speed blender, grain mill, or coffee grinder)
400 ml warm water
1 tsp unrefined salt
20 g dry sourdough starter
Optional: a handful of various seeds or 2 tbsp caraway seeds
Preparation:
For the best results, we recommend starting this bread-making journey in the evening. If you begin at 10:00 PM, your delicious homemade bread will be ready by 9:00 PM the next day. Here's a step-by-step guide to ensure your bread turns out perfect every time:
Evening (10:00 PM): Initial Mixing
Pour the sourdough starter into a large bowl. Gradually add 350 ml of warm water while stirring. You can use a metal whisk for this step, but avoid using any metal tools afterward.
Add 300 g of the freshly ground Grechka Buckwheat flour to the bowl and mix everything well with a wooden spoon.
Sprinkle the dough with a bit of flour on top, cover the bowl with a kitchen towel, and wrap it tightly in a plastic bag. Keep the bowl in a warm place (around 30-35ºC) for 12 hours. For best results, place it near a radiator or in a sunny spot.
Next Morning (10:00 AM): Second Mixing
After 12 hours, add another 150 ml of warm water and 150 g of the Grechka Buckwheat flour to the dough. Mix everything well with a wooden spoon, then sprinkle with a bit more flour.
Cover with a kitchen towel and wrap in a plastic bag again, leaving it in a warm place for another 8 hours.
Afternoon (6:00 PM): Final Mixing
After 8 hours, the dough will have risen significantly. Add the remaining 100 g of the Grechka Buckwheat flour and 1 tbsp of salt to the dough using a wooden spoon. If desired, add caraway seeds or various seeds, then mix everything well.
Transfer the dough to a baking form (previously lined with parchment paper or greased with oil and dusted with flour) and smooth it out.
Cover with a kitchen towel, wrap in a plastic bag, and let it rise in a warm place for another 2 hours.
Evening (8:00 PM): Baking
After 2 hours, the bread will have risen a bit more. Brush the top with oil and optionally sprinkle with caraway seeds or various seeds, pressing them in slightly with your hands.
Bake the bread in a preheated oven at 180ºC (with top and bottom heating and a light fan) for exactly 1 hour. For the best results, bake for 30 minutes with the fan on, and the remaining 30 minutes without the fan.
Cooling and Serving
Once the bread is baked, remove it from the form and parchment paper (if used) and let it cool completely.
