Christmas turkey with Grechka Buckwheat stuffing

Let's start the countdown to Christmas and New Year! The three of us are super excited about this festive season, as there are lots of great traditions behind these holidays. During the upcoming weeks we will be sharing some ideas to add to your Christmas and New Year’s to-do lists.

And what is the most important? Of course, Christmas dinner. This night allows you to stop for a moment and spend some quality time with your family. There are four main elements to the Christmas dinner: turkey with stuffing, gravy, cranberry sauce, and vegetables.

We at Grechka want to share with you an amazingly tasty recipe: turkey with Grechka buckwheat stuffing. Not only does it taste delicious, but it is a healthy dish that provides many nutritional benefits, and is especially handy for heavy dinners like Christmas ones.


Recipe


Cooking time: 3-4 hours

Ingredients:

1 whole turkey (approx 5kg)

1 onion

2 garlic cloves

200g mushrooms

2 celery sticks

2 carrots

150g butter

25g of stuffing herbs mix

Salt, pepper

Method:


1. Heat a saucepan and add a bit of olive oil

2. Add chopped onion and garlic to the saucepan and fry until golden

3. Add chopped carrots, celery, and mushrooms to the saucepan and fry on medium heat until water dissolves and all veggies are soft and golden

4. Add cooked Grechka Buckwheat, a pinch of salt and pepper to the mix and stir for about 2 minutes

5. When the stuffing is ready, preheat the oven to 220 degrees

6. Give your turkey a good wipe and start seasoning the cavity at both ends with salt, pepper and stuffing herbs mix

7. Stuff most of the mix into the main cavity, but be careful not to overstuff it

8. Stuff the rest of the mix into the cavity at the neck end

9. Rub the butter all over the turkey together with salt and pepper and cover with the tin foil

10. To calculate the cooking time, weigh your turkey: approximately 20 minutes per 500g

11. Turn the heat down to 180 degrees and roast the turkey for the calculated time until it is golden

12. Remove the tin foil for the last 45 minutes to brown the bird and enjoy
