Ingredients:
1 cup Grechka buckwheat
200g mushrooms, sliced
4 tablespoons sun-dried tomatoes, chopped
Fresh coriander and spring onions, pre-cut, for garnish
Balsamic vinegar, for drizzling
Method:
Boil the Grechka buckwheat according to the standard instructions.
Once the buckwheat is cooked, place 3 tablespoons of it into each serving bowl.
In a frying pan, cook mushrooms until they are tender and cooked through.
Place 2 tablespoons of the fried mushrooms and 2 tablespoons of chopped sun-dried tomatoes on top of the buckwheat in each bowl.
Garnish with pre-cut fresh coriander and spring onions for added freshness and flavour.
Drizzle balsamic vinegar over the bowl to enhance the taste and provide a tangy twist.
