Ingredients:

150g Grechka buckwheat, rinsed

50g butter (divided into 20g and 30g)

1-2 cloves garlic, chopped

5-6 organic white cup mushrooms, pre-cut

200ml chicken or vegetable stock

50g grated parmesan cheese

1 sprig of fresh rosemary

Parmesan cheese and your favourite seeds for garnish





Method:
  1. Rinse the Grechka buckwheat thoroughly.

  2. In a wide, shallow pan, melt 20g of butter over medium heat. Add the chopped garlic and pre-cut white cup mushrooms. Simmer for 3-5 minutes until the mushroom juice is extracted.

  3. Add the rinsed Grechka buckwheat to the pan and simmer for another minute, allowing it to absorb the flavours.

  4. Pour in the chicken or vegetable stock (200ml) and stir well. Cover the pan and let it simmer on low heat for 10 minutes. Stir the mixture every 2-3 minutes to prevent sticking.

  5. After 10 minutes, uncover the pan and add the remaining 30g of butter, grated parmesan cheese (50g), and the sprig of fresh rosemary.

  6. Cover the pan again and leave it for 3-5 minutes to allow the flavours to meld and the butter and cheese to melt.

  7. Once the "Risotto" is ready, place 3-5 tablespoons of it onto each plate. Decorate with additional parmesan cheese and your favourite seeds for added texture and flavour.
