Grechka Buckwheat with Greens

This delightful combination of Grechka buckwheat with courgettes and asparagus is a true vegan symphony of flavours. Not only is it incredibly easy to make, but it also promises to be a delightful treat for your taste buds.
Buckwheat is a rich source of complex carbohydrates, fibre, and plant-based protein. It also contains essential minerals like magnesium, manganese, phosphorus, and copper. Courgettes (zucchini) are low in calories and high in water content, making them a good option for weight management. Asparagus is rich in vitamins and minerals, particularly vitamins A, C, and K, as well as folate and iron. Together, these ingredients offer a well-rounded and nutrient-dense meal that contributes to overall health and well-being.

Ingredients:
1 cup Grechka buckwheat
2 medium-sized courgettes
100g asparagus
2 tablespoons olive oil
Salt to taste
Ground black pepper to taste
1 teaspoon dried coriander
Fresh coriander for garnish
Method:
Boil the Grechka buckwheat according to the "How to cook" instructions.
While the buckwheat is boiling, cut the courgettes into half circles and the asparagus into small pieces.
Heat a frying pan over medium heat and add the olive oil. Once the oil is hot, add the courgettes, asparagus, dried coriander, salt, and black pepper.
Fry the greens for about 15 minutes or until they are tender.
Once the greens are ready, add the pre-boiled buckwheat to the pan and mix well with the greens.
Fry the mixture for another 5 minutes, allowing the flavours to blend together.
Once the dish is ready, spoon several portions of the Grechka buckwheat with greens onto plates.
Garnish with fresh coriander for added flavour and visual appeal.
