Grechka Tabbouleh

Traditionally made with bulgur wheat, we've given this Mediterranean salad a nutritious makeover by using Grechka buckwheat as the star ingredient. Packed with protein, fiber, and essential nutrients, Grechka buckwheat adds a delightful nutty flavor and a satisfying texture to this vibrant dish.

Serves: 4 people
Cooking time: 15 minutes

Ingredients:

1 cup cooked Grechka buckwheat

2 bunches parsley

1 bunch green onion

1 bunch fresh mint

10 cherry tomatoes, diced

1 cucumber, diced

1/4 cup lemon juice

1/4 cup extra-virgin olive oil

Salt and pepper to taste




Instructions:
  1. Cook Grechka buckwheat according to the instructions.

  2. Rinse the parsley, green onion and mint, and chop it finely.

  3. In a large bowl, combine the cooked and chilled Grechka buckwheat, tomato, cucumber, lemon juice, olive oil, salt, and pepper.

  4. Stir in the parsley, green onion and mint.

  5. Taste and adjust seasoning if necessary.

  6. Serve chilled or at room temperature.
